Lead Culinarian - Big E's Sports Grill Grand Rapids Downtown

Position Summary:

Responsible for preparing all food items, while following local health department standards, Suburban Inns’ Core Values, and Suburban Inns/Big E’s standards, as well as assuming responsibility for the supervision of the Back of the House in the absence of the Executive Chef.

 

Essential Functions:

  • Report to work in Chef attire, presented neat and clean
  • Greet guests in a friendly, positive manner. Ask questions of guests and make personal connections to make them feel they are welcome and valued
  • Anticipate and meet the needs and expectations of our guests, then go one step further
  • Prepare all required items according to make sheets/recipes while upholding Big E’s standards
  • Supervise kitchen staff to ensure that methods of cooking, garnishing, and portion sizes are as prescribed by standardized Big E’s recipes
  • Assist in the training Team Members on sanitation and safety, menu planning, and related production activities
  • Ensure that high standards of sanitation, cleanliness, and safety are maintained throughout all kitchen areas at all times according to OSHA and Suburban Inns standards
  • Consistently maintain standards of quality, cost, presentation, and flavor of foods according to Big E's specifications
  • Monitor Food costs to achieve maximum profitability
  • Maintain the security of kitchen and its equipment and establish controls to minimize food and supply waste and theft
  • Notify the Executive Chef of expected shortages
  • Assist in interviewing, hiring and evaluating performance of all BOH staff according to Suburban Inns guidelines at the discretion of the Executive Chef
  • Make recommendations for maintenance, repair, and upkeep of the kitchen and its equipment to the Executive Chef
  • Service items in accordance with established portions and presentation standards
  • Set up, maintain, clean, and break down prep cook station
  • Maintain any logs required by the health department
  • Cover, date, rotate and neatly store all leftover products that are reusable
  • Maintain a working knowledge of all stations in the kitchen
  • Assist in food procurement, delivery, storage, and issuing of food items
  • Expedite food orders during peak service hours
  • Assure buffet is set up, broken down, cleaned up, and stocked
  • Maintain positive, open communication with the Front of House
  • Attend scheduled staff meetings
  • Follow Suburban Inns processes
  • Exhibit regular and recurrent attendance records
  • Other duties as requested by management

 

Position Requirements:

Minimum Knowledge: Requires ability to interpret / extract information and / or perform arithmetic functions. May require typing, record keeping, or word processing. Good communication skills

Formal Education and Job-Related Experience: High school diploma or equivalent related experience. Two years of job-related experience.

License, Registration, and/or Certification Required: ServSafe Food and Allergy Certification (may be completed upon hire)
